BREEDING TECHNIQUE
Espalier plants in the lands of Primitivo di Manduria DOP, headquarters of the our “San Gaetano” winery.
GROUND
Clayey-loam, calcareous, rich in minerals and iron oxides which give the characteristic earthy red colour.
HARVEST End of August - Beginning of September
WINEMAKING
The grapes with slight over ripeness on the vine are harvested by hand in small box. Fermentation takes place in vertical winemakers controlled temperature between 23-25°C for approximately 10 days. The final racking takes place using a soft press.
REFINEMENT
Long aging in French and American oak barriques, then in bottle.
ORGANOLEPTIC CHARACTERISTICS
Impenetrable ruby colour with purple reflections. The sense of smell gives off scents of morello cherry, carob, plum, followed by gentle spicy notes and a finish of chocolate. The sip is elegant and enveloping in perfect balance between softness, freshness and flavour. Caressing tannin. Persistent ed fulfilling.

Pieces of horse in sauce; baked lamb; stews with spicy sauces; long-matured cheeses; cured meat.
