Vinification and aging
The Moscato grapes, harvested at the right degree of ripeness, undergo a soft pressing and the must obtained ferments at a controlled temperature. This fermentation is stopped, by refrigeration, when the wine has reached 7.5 degrees of alcohol in order to maintain the right amount of residual sugar. Selected yeasts of own production then trigger the sparkling phase.
Colour
Deep straw yellow with lively, persistent foam and a very fine perlage.
Scent
Intense, fresh, pleasant and with a marked aroma, a typical characteristic of Moscato grapes.
Taste
Balanced between sweetness and aromaticity, rich in fruity nuances, and very pleasant persistence.
Service temperature
Serve rather cold, at temperatures around 6 ° C.
Food pairings
With its sweetness, never cloying, it goes ideally with fruit tarts, fruit salads and small pastries. Also excellent with ice cream and other cold specialties.
