VINIFICATION:
Delicate pressing of the grapes harvested at the right phenolic ripeness, fermentation in steel tanks at a temperature between 28 and 34° C with pumping over and punching down. Malolactic fermentation takes place the following spring in barrels. The refinement is carried out, for the two years foreseen by the specifications, in oak barrels.
CHARACTERISTICS:
A very classy wine with long aging, a garnet red with orange reflections that intensify with time. Characteristic aroma, ethereal and intense, the flavor is broad, robust, but at the same time velvety and harmonious.
PAIRINGS:
First courses seasoned with elaborate sauces based on red meat, lamb, mushrooms. Excellent with game and cheeses.
