De Cecco Maccheroni Alla Chitarra

Originally from Abruzzo, Maccheroni alla Chitarra correspond to an original long format with a square section. Historically, pasta was cut with a special tool called a "guitar", formed by a wooden frame on which thin steel wires were stretched. 

The dough, not excessively thin (with a thickness corresponding to the space between one thread and another), was placed on the threads and then cut by pressing on them with a special rolling pin. 

The most typical condiment to combine with this format is the lamb ragù. In particular areas of Abruzzo, the traditional condiment for Maccheroni alla Chitarra is a tomato sauce enriched with veal meatballs with a diameter of about one centimeter, the so-called "pallottelle". Macaroni alla Chitarra are also excellent with meat dips of different types, with tomato and aubergine-based sauces, or with fish-based sauces.
