Tasting Note:
This bright, appealing red from a native Sicilian grape
variety emits flavours of macerated fruit, beeswax and exotic
spice, plus a delicious fragrance of roses.
Winemaking:
Harvest in boxes, pressing and destemming and
fermentation at 25°C for 12 days and pumped over twice.
Vineyard :
In the vineyards of Sciara Nuova the Nerello Mascalese
vines are planted at an altitude of 850 metres above sea
level with alberello and guyot training systems. Density of
planting is between 5000 and 10000 plants per hectare.
Food matching:
Initially shy, it is an unsuspectingly strong and determined
wine. It is suitable for a cuisine without borders and stands
out for its refinement and elegance. Pork belly with quince
and wild mustard. Frosted dolphinfish with grilled pore
mushrooms and veal stock flavored with summer lemons.
