In the processing of pasta, water plays a fundamental role especially in the mixing phase of the semolina. 

Our Region can count about thirty springs, located particularly in Upper Molise , in the Volturno valley and in the Matese area. It is from the Matese, a plateau of karst origin, that the fresh spring waters with low mineral content, constantly light, that we use to obtain our pasta flow.

Even these lasagne by appetizing side edging, are the result of this mix of excellent ingredients.
