Zampone
Zampone is an ancient specialty made with pork, spices and herbs stuffed into the pig's front leg, from which it takes its shape.
Zampone is prepared with lean and fatty pork meat, coarsely minced, then combined with very finely chopped pork rind, all flavoured with pepper, nutmeg and cloves.
A must-have on Christmas tables or at New Year's Eve dinner, zampone is the king of the holidays. Accompanied with lentils or mashed potatoes, zampone is the symbol of an ancient tradition that has been passed down from generation to generation.
